Strawberry Sauce Cake
Cake:
1 1/2 cup of gluten free all purpose flour (I used Cuisine Soleil)
1 tsp baking powder
1/4 cup of dairy free margarine
1 cup of sugar
1 cup of vanilla soya milk (or milk of choice)

Strawberry sauce:
In a blender, combine:
  • 1 pound of strawberries (about 500 g)
  •   Juice of a lemon
  •  3/4 cup of sugar

Blend until you obtain a fine texture. Pour this mixture in a saucer and add:
  • 1/4 cup dairy free margarine and heat until the margarine has melted.

Mix well and set aside.

Preparation of the cake:
  • Heat the oven to 325oF.
  • Sift the flour and baking powder together in a small bowl and set aside.
  • In a bigger bowl, cream the margarine and add the sugar gradually to obtain a smooth texture (if this is hard to reach, add a little bit of soy milk to the mixture from the total quantity required for the cake, but careful not to add more liquid than the recipe asks for).
  • Add a quarter of the milk and the flour mixture and mix.  Repeat until all the ingredients have been added.
  • Butter a square 8 in baking dish and pour in the cake batter. Set aside.
  • Pour gently the strawberry sauce over the cake batter beinf careful not the mix the 2 together, you can use a spoon to transfer the liquid carefully.
  • Cook from 45 min to 90 min for gluten free or from 45 min to 1 hr for regular flour (check for readiness in the center of the cake, if it giggles, it is not done!).

This recipe is a modification from a recipe featured on Les Gourmandisesd’Isa

Bon appétit!
